Whatever the sound was already stored as inside the video. Most phone and screen recordings hold AAC, which comes out as an .m4a. WebM clips usually give an .ogg, and camera footage often gives a .wav. Picking the file type for you would mean re-encoding, and that's the step this tool skips.

You get an MP3 when the video's sound was an MP3 to begin with. Otherwise it's usually an .m4a, which plays on phones, in browsers, in CapCut and in every editor that takes an MP3. Turning it into an MP3 would re-encode it and make it sound slightly worse.
